You will need:
1/2 c. Pumpkin puree'
1/3 c. Maple syrup
1/2 c. Almond/oat milk
2 Tbsp. coconut oil
1 1/2 c. Oat flour
1 Tbsp. Pumpkin pie spice
1 Tsp. baking powder
Pinch of sea salt
Mini dark chocolate chips
Cook time: 16-18 minutes

Preheat your oven to 350 degrees.
Combine all of your wet ingredients in a large bowl and mix.
Next, add in all of your dry ingredients and mix until everything is thoroughly combined. We blended two Earnest Eats Superfood Pumpkin Spice Oatmeal Cups for 20 seconds to make 1 1/2 cups of oat flour for this recipe!
Lastly, fold in your chocolate chips with a desired amount of your choice. You can never add too many! Add in any other toppings you'd like! We added in some extra of our Pumpkin Spice Superfood Oatmeal blend for some texture and lightly folded it in.
Fill your muffin tins halfway. Place in your oven and back away! Leave in the oven a couple minutes longer to achieve a crispier muffin top. Enjoy!
